WWW.EATINEATOUT.CA 61 Combine 1 cup vanilla wafer crumbs and 3 Tbsp melted butter (add more if mixture is too dry). Mold into bottom of 10” x 7” x 2” pan. Dissolve 1 package of raspberry Jello in 1 cup boiling water. Add 1 cup cold water, mix well. Place in refrigerator. When just beginning to set, add 1-3/4 cups fresh raspberries.* Return to fridge to set fully. Fold in 1/2 cup whipped cream. Pour mixture over crumb crust and chill for 2 hours or overnight. When ready to serve, whip 1-1/2 cups whipping cream until stiff peaks form. Spread over raspberry layer. Top with additional vanilla water crumbs. *TIP: if you have no fresh berries - here is an alternate method that works very well. Add 1/2 cup cold water and 2 cups frozen raspberries. Stir until thawed. Then proceed with the method above. Raspberry Shortcake Dessert Kids will love this light summery dessert! Because you make it in a pan, it serves a crowd. Great to bring to a pot- luck barbecue, everyone will love it!
