30 WWW.EATINEATOUT.CA Cookin’ GreensTM on the Grill 3 Tbsp olive or vegetable oil 3 garlic cloves, finely chopped 1/2 bag (250g ) Cookin’ GreensTM Chopped Designer Mix (or your favourite Cookin’ GreensTM product), (frozen) 1/4 tsp sea salt (or to taste) 1/8 tsp pepper (or to taste) 1-2 tsp balsamic vinegar (optional) TO MAKE A FOIL BAG: Take a large 24” piece of foil. Fold it in half and then in half again. Fold three sides under with 1/4” folds to seal. Leave one side open to fill envelope. 1.Preheat the barbecue to medium-high. 2. Toss all ingredients (except vinegar) in a bowl. Place into foil bag; seal remaining side. 3.Place the sealed bag on indirect heat on the grill with the lid closed for 15 minutes. Open foil, carefully, stir and reseal. Return to barbecue for an additional 12-15 minutes. 4. Remove from barbecue, open foil, add vinegar, if using. Stir. Serve immediately as a side dish.* Serves 2. TIP: Try adding an extra flavour boost - cheese, nuts or dried fruits. We added sundried tomatoes and goat’s cheese. So yummy! Teriyaki Rainbow Trout on Cookin’ GreensTM Kale 6 Tbsp olive or vegetable oil 5 garlic cloves, finely chopped 1 bag (500g ) Cookin’ GreensTM Chopped Kale (frozen) 1/2 tsp sea salt (or to taste) 1/4 tsp pepper (or to taste) 1lb Rainbow Trout fillets, cut into 4 serving- sized pieces MARINADE: 3 Tbsp EACH sherry, brown sugar 2 Tbsp EACH water, soy sauce, vegetable oil 2 tsp ginger, minced 2 tsp garlic, crushed 1. MARINADE: Place all ingedients in a freezer bag. Mix. Add fish fillets and marinate in the refrigerator for 1-3 hours. 2. Preheat the barbecue to medium-high. Toss all ingredients (except fish) in a bowl. Divide mixture among 2 foil bags. Seal remaining sides. 4.Place the sealed bag on indirect heat on the grill with the lid closed for 15 minutes. Open foil, carefully, stir. 5. Remove fish from marinade. Discard marinade. Place on top of Cookin’ Greens in each foil bag. Return to barbecue for an additional 12-15 minutes. 6. Remove from barbecue, open foil, carefully, and check to see that fish is cooked and flaky. Serve immediately.* Serves 4. *ensure greens are cooked evenly. for food safety reasons, internal temperature should reach 71oC. Keep frozen until ready to use. Store unused product in freezer.
