EatinEatOut : Spring 2013
76 WWW.EATINEATOUT.CA From cooking for a bunch of wild tree planters in a small trailer in the back woods of Northern Alberta to planning our own resto-coffeebar, food has been with me every step of the way, shaping who I am today. I simply love food. Cooking it, talking about it, teaching others about it, taking photos of it, and, more importantly, eating it. So, it's no wonder I fell into blogging a few years ago. Blogging has provided me an outlet to share my love of food with others, not to mention connect with a whole world of food loving people like myself. Because if there is one thing we all have in common, it's food. And I don't know about you but I live for food, all types and tastes and ethnicities. It's all about moderation and what better way to convey that than to share with you a cookie recipe. Go ahead, enjoy. Brown Butter Dark Chocolate Chunk Cookies 1/2 cup butter, browned and cooled 1/2 cup white sugar 1/2 cup brown sugar 1 egg 1 teaspoon vanilla bean powder 1/2 teaspoon baking powder ¼ + pinch salt 3 teaspoons espresso 1-1/4 cup dark chocolate, chopped Preheat oven to 350ºF. Cream the brown butter and sugars until light and fluffy. Add the egg and espresso. Combine the dry ingredients, whisking until thoroughly combined. Gradually mix the dry into the wet. Add in the chocolate chunks. The mixture will be rather crumbly. Form the dough into 12 large rounds, flattening slightly. Bake on a parchment lined baking sheet until the edges are slightly browned, about 13 minutes. Makes 12 large cookies.
