Stubborn Texas woman that I am, I really wanted to get an unbiased opinion of my work, so I shipped all of my ingredients ahead of me and told the owners of the chateau that it was my book collection. Then, for the next four months, everything I baked was gluten-free and I got a standing ovation every night. No one could tell the difference and it gave me the confidence to share my work with everyone elase that was looking for the same thing: gluten-free baked goods that were indiscern- able from their gluten contemporaries.
