78 WWW.EATINEATOUT.CA Jalapeno Margarita Lime quarter for rim Salt and sugar evenly mixed for rim 4-6 slices fresh jalapeno (I used 4 with jalapeno tequila...adjust according to taste) 2 oz lime juice 2 oz agave nectar 2 oz orange liqueur 4 oz tequila (I used a jalapeno infused tequila but it is not required) Ilove Colorado. This summer I had a moment of questioning that love when it was 107 degrees in the shade. Still, I’ve lived here 27 years and I can’t imagine wanting to be anywhere else. I moved here from North Carolina where I had lived for 10 years and it holds a near and dear place in my heart, but my roots are in Missouri. I grew up in a suburb of St. Louis and though I have not been back for a long time, we are always such a part of the geographical space where we grew up. Grandma’s and cousins and our first pets; pansies in the yard and where I think my first true love happened. Tomatoes. I’ve owned a web business for 17 years but my passion has always been the preparation of food; it is my way of showing love for friends and family. A cake for a birthday, soup for a cold or a cocktail for a celebration... I love doing them all! 1. Rub the lime quarter around rim of each glass and then dip the rims in the salt/sugar mixture. 2. Fill the glasses with ice. 3. Muddle the jalapeno slices with the lime juice in a shaker using a muddler or the back of a spoon. 4. Add the agave nectar, orange liqueur and tequila to the lime/jalapeno mixture, fill the shaker with ice and shake well. 5. Divide the mixture between the two glasses. Garnish with a lime and jalapeno slice.
