46 WWW.EATINEATOUT.CA 1. Preheat oven to 325o F. Put choco- late into a medium bowl. Bring 2-1/2 cups cream and espresso powder to a simmer in a small saucepan. Pour over chocolate in bowl. Let stand 5 minutes; stir lightly until smooth. 2. Whisk together egg yolks, vanilla, and salt in a large bowl. Whisk in chocolate mixture. Pour through a fine sieve into a small bowl. 3. Place six 6-ounce ovenproof cups ramekins or small cappuccino cups into a roasting pan. Pour chocolate mixture into cups, dividing evenly. Pour enough boiling water into pan so it comes halfway up sides of cups. Cover pan with foil. Cook until custards are barely set, about 25 minutes. 4. Transfer cups to a wire rack, and let cool slightly. Cover with plastic, and refrigerate 1 hour (up to overnight). Garnish with mini marsh- mallows. Makes 6 servings. 6 ounces best-quality bittersweet chocolate, finely chopped 2 1/2 cups heavy cream 6 large egg yolks 1/2 teaspoon pure vanilla extract 1/4 teaspoon salt 2 tsp of espresso powder Boiling water, for roasting pan Hot Chocolate Pots de Creme These tiny desserts are perfect for a party, and with the addition of espresso powder they are taken to another level for a fantastic finish to the end of the evening. These desserts can also be made one day prior to your party. 1. Place the milk and sugar in a medium saucepan and bring to a simmer, take off heat. Stir in the chocolate, vanilla, cinnamon, and cayenne pepper and allow to steep for 3 minutes. Reheat on low, until it simmers. 2. Strain the chocolate into a measuring cup and pour into mugs. Stir with cinna- mon sticks.
