You never know who might show up (or whose stomach may be bottomless), so it’s always a good idea to make an extra dish or two. Make it in advance: All three of these recipes can be assembled several hours beforehand, so preheat the oven right before your guests arrive and bake as people start to trickle in. They also travel well, so bring them along to a party if you’re not playing host this year. When do I serve it? Stick with the half and two quarters rule. Serve roughly half of the tapas right at the beginning of the evening, as that is when people are likely to eat the most. About mid-way through the night, serve half of the remaining tapas (a quarter), and then the other half (the other quarter) just before midnight.
