WWW.EATINEATOUT.CA 57 Indian Spiced Sweet Potatoes and Yams 2 yams 2 sweet potatoes 1 teaspoon whole cumin seeds 2 - 3 tablespoons olive oil 1 teaspoon fresh ginger, grated to a pulp Large handful fresh cilantro, chopped SPICE MIX 1-1/2 teaspoons ground cumin 1 teaspoon garam masala 1/2 teaspoon hot cayenne, or to taste 1/4 teaspoon ground turmeric (optional) Salt to taste 1. Peel and chop the sweet potatoes and yams into chunks. Boil for about 5 - 7 minutes in salted boiling water, until just tender. 2. Drain, shaking the pan vigorously, so that the potatoes get crushed on the outside. This will create a lovely crisp coating during the roasting process. 3. Meanwhile, combine the ingredients for the spice mix in a small bowl. Keep aside. 4. Whisk together the cumin seeds, olive oil, and the grated ginger. 5. Preheat the oven to 375º F. Place a heavy roasting pan inside it for 2 - 3 minutes. Using oven gloves, remove, and pour in the olive oil mixture. Immediately add the potatoes and spice mixture to the oil, and stir to coat well. 6. Transfer back to the oven; roast for 20 minutes, turning a couple of times, until tender. 7. Turn off the oven, and turn on the broiler. Place the potatoes under the grill for around 4 - 5 minutes, watching them and turning occasionally, until they start turning crispy. Stir in the fresh cilantro, just before serving.
