56 WWW.EATINEATOUT.CA 1 cup turbinado sugar (or 3/4 cup white + 1/4 cup brown sugar) 1 cup water 1/2 cup loosely packed basil leaves 1 pint blackberries 1/2 cup key lime juice (around 10-12 key limes) 750ml bottle of seltzer sliced key lime to garnish Bring the water and sugar to a boil. Remove from heat and pour into a jar with the basil leaves. Let cool in the fridge for 1 hour before using. Quickly pulse the blackberries in your food processor (don't over-do it, you just want to loosen them up). Place a cheese cloth or fine- mesh sieve over a bowl and pour in the black- berry puree. Use a fork to help push the berries against the sieve to make sure you're getting all the juice out. Pour the basil syrup (leaves strained), blackberry juice, lime juice and seltzer into a pitcher. Stir to combine. Pour over ice into glasses and garnish with a little key lime slice. These wee little limes go a long way in brightening up the deep, sexy avour of blackberries in this mocktail! Should you wish to add a shot of some- thing boozy, gin or white rum would be a lovely ad- dition. If you'd prefer to forgo the basil syrup, feel free. However, it does impart a beautiful herbacious avour against the tart berries and lime.
